In the microvinification cellar, we vinify various varieties from the wine-growing regions of Slovenia, which we study as part of our tasks and research. In the cellar, we can vinify smaller quantities of grapes and test different wine production technologies. This allows us to study the influence of different yeasts, temperatures, and other factors on the fermentation process and wine quality parameters.

Vinification of mash/must and bottling of wine are performed for the needs of:
- Public Service in Viticulture,
- Professional task: Isotopic analysis of Slovenian wines with geographical indications,
- Domestic and foreign projects,
- Diploma, master’s, and doctoral theses,
- External clients.
Equipment:
The cellar is equipped with a liquid-based cooling system for stainless steel tanks, enabling temperature-controlled alcoholic fermentation of must for each individual tank. The cellar is also fitted with an inert gas protection system (nitrogen) to safeguard the wine. Processing equipment includes a grape destemmer-crusher and a pneumatic press. For archiving wine samples, a dedicated room is temperature-controlled and cooled year-round.
