Kakšni so pozitivni razlogi za naše zanimanje za zelje in repo? Eden od razlogov je, da gre za redke zelenjadnice, ki izvirajo iz mediteranskega bazena. Zelje in repa sta bila selekcionirana iz divjih oblik in pripadata družini Brassicaceae (prej Cruciferae). Še vedno obstaja precejšnje število domačih sort ali populacij, ki jih kmetje pridelujejo že več generacij in te nam ponujajo ogromno kulinaričnih možnosti. Cilj publikacije je, da jih predstavimo preko izbranih tradicionalnih in izvirnih receptov iz štirih mediteranskih držav, Alžirije, Francije, Italije in Slovenije.
What are the reasons for our interest in cabbages and turnips? One of the reasons is that they are one of the few vegetables that are native to the Mediterranean basin. The cabbage and turnip were selected from wild forms and all belong to the Brassicaceae family (formerly Cruciferae). A considerable number of farm-grown varieties or landraces, which have been cultivated by farmers for generations, still exist and offer a wealth of culinary possibilities for us. The objective of this publication is to present them through a selection of traditional and original recipes from four countries, Algeria, France, Italy and Slovenia.
